Grilled chicken and pasta salad

4 skinless , boneless chicken breast halves
steak seasoning to taste

8  ounces rotini pasta
8 ounces mozzarella cheese, cubed
1 red onion , chopped
1 head romaine lettuce , chopped
6 cherry tomatoes , chopped


Preheat the grill to higher heat. season both sides of chicken breast halves with steak seasoning.
  Lightly oil the grill gate. Grill chicken six to eight minutes per side, or until juices run clear. Remove the heat, cool and cut into strips.
  Meanwhile place the rotini pasta in a  larger pot of lightly salted boiling water . Cook 5 to 10 minutes, until tender.
     Drain and rinse with cold water to cool. In a large bowl , mix together with the cheese , onion , lettuce and tomatoes. Toss with the cooled chicken and pasta to serve.

Srilankan southern style Fried chicken

                            FRIED CHICKEN


  • 750grams of chicken pieces
  • 1 1/2 cup of flour
  • 2 Eggs
  • 1 Tbs of Water
  • 1 1/2 tsp of paprika(hot)
  • 1  tsp of chillie powder
  • 1 tsp of Garlic Paste
  • 3/4 tsp Pepper
  • 1/3 tsp of turmeric powder 
  • 1/2 lime
  • oil
  • salt
  • Wash the raw chicken thoroughly and clean out all unnecessary elements. 
  • Squeeze lime juice over the chicken; add the garlic paste,chillie powder,pepper,turmeric powder and 1/2 tsp of salt,cover the dish and leave to marinade for an hour.
  • Get two separate medium sized bowls.In one,beat the eggs until smooth and add the water.And in the other bowl,mix together the flour,paprika 1/2 tsp of salt.
  • Now take each piece of chicken,dip it in to the egg and then coat well in the flour mixture.
  • After each piece of chicken has been coated,fill the pan(until half full) with oil and heat it up.
  • Coat the chicken with egg and flour mixture again and then fry immediately.
  • Fry until brown and crisp.

Vegetable Stir Fry

Vegetable stir fry :
                          100 g finely chopped onions
                          5-6 cloves, garlic, finely chopped
                          20 g of ginger , sliced into thin matchstick pieces
                          1/2 tsp chili flakes
                          1 medium - size carrot, sliced
                          5-6 shiitake  mushrooms, sliced
                         1 small head cauliflower cut into florets
                         1 small head broccoli  cut into florets
                         1 red pepper , sliced into strips
                         2-3 cups of baby bok choy
                         Handful fresh basil
                         2 tbsp coconut oil or vegetable oil

Stir Fry  Sauce  :
                        2/3 cups of coconut oil
                        2 + 1/2 tbsp fish sauce
                        3 + 1/2 tbsp fresh lime juice
                        1 + 1/2  tbsp soya sauce
                        1/3 to 1/2 tsp dried chili flake
                         2 1/2 tsp brown sugar

Preparation :
              1. Combine all stir fry sauce ingredients together in a cup or bowl. Stir well to dissolve the sugar.

              2. Taste - test the sauce , keeping in mind that the first taste should be spicy-salty, followed by sweetness and the rich taste of the coconut milk . Adjust these flavors to suit your taste , adding more lime juice if so sweet or salty ( note that it will be less salty when combined with vegetable )

             3 . Heat a wok  or  large frying pan over medium-  high- heat . Add the oil and swirl around Then add the onion , garlic, ginger and chili .  Stir fry 1-2 minutes and then add the carrot , mushrooms and cauliflower.  Also add 1/4  cup of the stir fry sauce . Combine stir-frying 2-3 minutes.

             4. Add broccoli and red pepper up to 1/2 of remaining stir-fry sauce enough gently simmer in the sauce (2 minutes ) 

            5. Finally  add the bok choy . Add more of the stir-fry sauce as needed enough to just cover vegetable in sauce . Simmer until bok choy is  cooked but still bright green with some crispiness (2-3 minutes more)

            6. Remove from heat and do one last-taste-test if not salty enough , add a little a more fish or soya sauce . If too salty or sweet . Add another squeeze of lime juice . add more sugar or chili if desired . Top with fresh basil and serve over that jasmine scented rice

Spicy Rice

Ingredients :
              - 500g rice
              - 150 g Prawns
              - 150 g chicken pieces
              - 90 g carrot
              - 90 g Mushroom
              - 1 Tsp soya sauce
              - 60 g green piece
              - Ginger, garlic, onion, pepper and salt
              - 2 eggs
              - vegetable oil

Method :
             1. cook the Rice and set  aside
             2. Beat the eggs, add some salt for it
             3.  add pepper and green piece
             4. Add 1 Tbsp oil into a pan and pour the beaten eggs  into it.  and scramble it .
             5. Add  1 Tbsp oil in another pan and add onion, ginger, garlic and prawns. add the boiled chicken  and  grated carrot too
             6. Mix soya sauce with the chopped mushrooms
             7.Mix the  Rice and  the scrambled eggs


Spanish Chicken

Ingredients :

                  - One whole Chicken
                  -   1/2 cup Flour
                  - Tbsp 1/4 Chili powder
                  -  60 g deviled cashew
                  - 2  cups of tomato juice
                  - 1/2 cup fresh  milk
                  - 60 g grated cheese
                  - 1/4 Tsp Pepper powder
                   - Oil   for frying

 Method :

              1. cut the chicken into big pieces
              2. Put flour, pepper powder, chili powder in a paper bag
              3. Put the cut chicken pieces into the bag and shake it till the flour gets coated over the chicken pieces
             4. fry the chicken till it turns  golden brown in heated oil
             5. put the chicken into a pan and add tomato juice, 1/2 cup of water and cook the pieces
             6. add fresh milk and cook for some time.
             7. relish it ! with adding cashew and cheese pieces on top.

Cinnamon Cake with cream cheese topping

Ingredients :

                    - 3/4 cup treacle 
                    - 2 eggs
                    - 1 1/2 cups finely grated raw carrot
                    - 2 cups whole wheat flour
                    - 1 tsp baking soda
                    - 2 tsp ground cinnamon
                              - 1 cup chopped cashew nuts

  Ingredients :

                      - 1/2 cup cream cheese
                      - 4 tbsp butter
                      - 3/4 cup icing sugar
                      - 2 tsp orange zest 

        Method :

                       1. Beat the eggs well in a mixing bowl . Add the treacle and oil and beat till combined . Add flour , grated carrot , baking soda, chopped  cashew and cinnamon. Mix well till all ingredients are well combined.
 2. Pour the mixture into a prepared cake pan ( approx. 8" x 8") and bake in a preheated oven at 190 degrees C for approximately 45 minutes or until risen and firm to the touch. Remove from the oven and set aside for 10  minutes. then turn it out onto a wire rack to cool

3. To make the topping put all  ingredients into a bowl and beat together for 3-4 minutes until completely smooth. Remember - the cream cheese has to be at room temperature before you start beating or else the topping will be lumpy and you dont want that!

4. When the cake is completely cool , move it to a serving platter. Spread the topping over the smoothly . Decorate with more strips of orange zest and cut into chunky pieces . Relish !

Chicken wings

Ingredients :

                     - chicken wings 500g
                     - dark soya sauce tbsp 3
                -  ginger, garlic, onions -  chopped
                    - pepper powder as required
                - salt
                - sugar 1 tbsp
                - aginomoto 2 tsp
                - water to cover the chicken
                - vinegar 2 tbsp


                1.  heat add all the ingredients in a light fire for about 7 minutes in closed lid
               2. take off the lid and heat in a light fire till it get cooked.




OVEN- ROASTED CHICKEN THIGHS with carrot and potatoes

Ingredients :

                               - 6 large chicken thighs with skin and bones
                     - 1 tbsp olive oil
                     - 1 tbsp salt
                     - 2 tbsp dried thyme
                     - 1 1/2 tbsp freshly ground black pepper
                     - 1/4 tsp freshly grated or ground nutmeg
                     - 4 medium unpeeled yukon gold potatoes , scrubbed, cut into 2-  inch thick spears
                     - 3 medium carrots , peeled , cut into 2-  inch  spears.

          Method :

                       1. Preheat oven to  450 degree Fahrenheit.  coat large rimmed baking sheet with 1 tbsp oil.  place the  chicken  on baking sheet. turn to coat with oil and set skin side up. mix salt, thyme, 1 1/2 tsp pepper and  nutmeg in a small bowl . sprinkle half of mixture over chicken.
                     2. Roast until the chicken starts to brown and some fats has rendered , about 30 minutes . meanwhile , combine potatoes, carrots , 2 tbsp oil in  large bowl. transfer thighs to medium bowl ; turn to coat with drippings roast until vegetables soften , 30 minutes. place thighs on vegetables ; 
                   3. pour accumulated juices from chicken over  . return sheet to oven  . roast until chicken  is cooked and vegetables brown, 15 minutes longer


Chicken curry ( kashmiri style)


                   - 8 chicken legs ( cut into two)
            - 4 tbsp masala  powder
            - 1 tbsp red chili powder
            - 4 tbsp tomato ketchup
            - 1 tbsp Worcestershire  sauce
            - 1 tesp 5 spice  pwder
           - 1 tesp sugar
           -  2" pieces ginger - grated
           - 3 tbsp oil
           - 4nos garlic clove -  crushed
           - 1nos juice of lime
           - i tbsp fresh coriander leaves chopped
           - 3 tbsp  seasoning powder


                   1. to make marinate mix the masala powder tomato  ketchup, chili powder , Worcestershire sauce. five spice power , sugar, salt and little water leave to rest for 10  minutes.
                   2. Rub the masala mixture over the chicken and rest for 1 minute 
            3. heat oil in a pan ,  add crushed ginger and garlic until golden brown.
                  4. Add the chicken and fry until sealed. then cover and cook until the chicken is tender and oil separated  from  the sauce, sprinkle the lemon juice,  ginger slices,  chopped coriander over the chicken serve hot with plain rice.

CHICKEN in cashew nut sauce

Ingredients :

                      - 500g chicken cut in to cubes
               - 2 nos medium onions cut in to quarters
               - 1/2 cup cashew nuts
               - 2 tbsp tomato paste
               - 1 tesp garlic -  crushed
              - 1 1/2 tesp garam masala
              -  1  tesp chili powder
              - 1 tbsp lime juice
              - 1/4  tesp turmeric powder
              -  salt to taste
              - 1 tbsp curd
              - 2 tbsp oil
              - 2 tbsp coriander leaves chopped
             - 1 tbsp sultana
             - 175g mushrooms
             - 1 1/2 cups water

            Method :

                       1. place the onion in food processor  and process for 1 minute and add tomato puree, cashew nuts, garam masala
, garlic, chili powder, lemon juice, turmeric, salt and curd to the processed onions and process for further 1 - 1 1/2 minutes ( as a spice mixture)

                    2. in a heavy pan heat oil and pour the spice mixture in to the pan and fry for 2 minute. and when its lightly cooked and half of the chopped coriander, sultans, and chicken and continue to stir fry for one minute.

                  3. add mushrooms , pour the water to a simmer , cover the pan cook in low heat for 10 minutes  or until its cooked well and sauce is thicken , garnish with chopped coriander leaves.




Chicken wings in tomato sauce

Ingredients :

                    - 20 nos chicken wings ( skin on )
             - 1 tbsp garlic
             - 2 tbsp onoion
             - 1 tbsp ginger
             - Red and  Green chilli chopped and mixed together
             - 1 sprig of celery
             - few  sprigs of spring onion
             - 200g of chicken minced
             - salt, pepper, ajinomoto to taste
             - 1 tsp sesame oil
             - 2 egg whites
             -  200g bread crumbs or white  sesame seeds
             - oil for deep frying

      Method :

                    1. pull the chicken out of the bone half way and turn 
                    2 . then mix well and stuff  the wings
                    3 . dip in egg white and coat with bread crumbs or sesame seeds.
                   4 . deep fry and serve hot with tomato sauce.



Chicken Tikka

 Ingredients :

                 - boneless chicken cubes                  450 g
                 - fresh ginger - crushed                    1 tsp
                 - Garlic - crushed                             1 tsp
                 - chili powder                                   1 tsp
                 - Turmeric powder                           1/4 tsp
                 - Salt                                                 1 tsp
                 - curd                                                150ml
                 - Lemon juice                                   4 tbsp
                 - fresh chopped coriander               1 tbsp
                 - oil                                                   1  tbsp

      Method :

                  1. in a  bowl mix chicken,  ginger, garlic, chili powder, turmeric powder, salt, curd, lemon juice, coriander leaves and marinate   for at least 2 hours
                 2.  grill for 15-20 minutes
                 3.  Garnish with onion rings  and lime or lemon sliced.

Shawarma rolls

                            Shawarma rolls


          dough :

                     - white flour                         3 cup
                     - an egg
                     - Yeast                                 1/4 teaspoon
                               - Sugar                                 1 tablespoon
                     -  salt                                   1/2 teaspoon
                     - Water                                1/4 cup
                     - melted butter

       Filling :

                    - Shawarman meat
                    - shredded lettuce                   1 cup
                    - Chopped tomato                   1/2 cup
                    - onion cut into thin slices       1/2 cup


                 - combine all  dry dough ingredients and  add water to  knead it smooth 
                 - Cover and stand in a  warm place  for 1/4 hour
                 -  Divide the dough into small balls , brush with butter and  stand for 10 minutes
                 - Flat  each piece into thin circles ,  heat , griddle and fry the both sides 
                 - Fill each piece with shawarman  meat and vegetables
                 - Serve it hot

Ingredients :

                                   - flour                      1 kg
                       - Sugar                     500g
                                  - Butter                    200g
                       - eggs                           4
                       - Salt 
                       - Oil

             Method :

                            -  Beat the eggs adding butter and sugar
                            -  Add the flour little by little  while mixing it
                            - make them into beautiful shapes and fry it


Gulab jamun

                          Gulab jamun


   Ingredients :

                          flour                            1 pound
                          milkmaid                     1 small tin
                          Baking powder           1 teaspoon
                          Sugar                           1 pound
                          water                           1 tea cup
                          Vanilla essence

           Method :

                          - mix the flour and the baking powder
                          - add salt and and vanilla essence to the flour and mix it well
                          - add milkmaid and mix it neatly
                          - make small balls out of the mixed flour
                          - leave it in the oil for about 2 hours
                          - fry the balls in the oil
                          - prepare a sugar syrup and dip the balls into  it
                          - serve it

Special salad

                        SPECIAL SALAD

     Ingredients : 

                         -  Bell pepper ( red , green , yellow )          500g
                         -  sukini ( green )                                           2 kg
                 - onions                                                         1 kg
                 - sausages                                                    500g
                 -  curd                                                           1 cup
                 - sugar                                                          4 teaspoon
                 - mayonnaise                                                3 tablespoon
                 - vinegar                                                       4 teaspoon
                 - salt
                 - pepper powder                                           as needed

      Method :

                      - Remove the seeds off the bell pepper and chop them to pieces
                      - chop sukini to  small pieces
                      - fry the sausages and cut them into small pieces 
                      - chop the onions
                      - add the curd, salt,  mayonnaise,  sugar, pepper powder, and vinegar into a pan and mix it well
                      - add the chopped vegetables and the fried sausages to the pan containing the mixture 
                      - Serve the salad 


Thai noodles

                         THAI NOODLES

         INGREDIENTS :

                                                 - Noodles                      3 kg 
                                - onion leaves                500g
                                - carrot                          500g
                                - cabbage                       500g
                                - smashed ginger              50g
                                - smashed garlic               50g
                                - mini prawns                500g
                                - onions                         100g
                                - Tomato sauce              1/2  cup
                                - chilli sauce                  1/2  cup 
                               - soya sauce                    1/2  cup
                               - Butter                           200 g
                               - broccoli                        100g
                               - Salt                                as needed

        Method :

                        - boil the noodles in hot water using 2 spoons of butter and a pinch of salt 
                        - Peels the skin off the prawns
                        - chop the onions , carrot , and the cabbage and chop the onions leaves lengthly.
                        - heat butter in a pan and add the smashed ginger and garlic
                        - add the prawns into it
                        - after about 2-3 minutes add all the sauces into it
                        - add salt as required
                        - add the vegetables and mix it well
                        - add the noodles and the chopped onion leaves 
                        - Finally add the broccoli and serve the dish

Devilish Chocolate Roulade

                              Devilish Chocolate Roulade

Ingredients :

                       Chocolate ( cut into small pieces )       175g

                       Egg yolk                                                  4 nos

                       Egg  white                                               4 nos

                       sugar                                                       115g

                      cocoa Powder for dusting      


For the filling 

                    Chocolate (chopped to small pieces)      225gr
                    Brandy or Rum                                      45ml
                    Egg yolks                                              2 nos
                    250gr Cream Cheese                            2 nos


1. preheat the oven to 180 C. line a baking tray with grease proof paper. melt the chocolate in a bowl over a pan of water.

2. whisk egg yolk and sugar in a bowl until it get thick then stir in the malted chocolate place the egg whites to soft peak, then fold lightly and evenly in to the egg and chocolate mixture.

3. pour in to the tray spread to the corners bake for 15-20 minutes, until well risen and firm to the touch.Dust of sheet of grease proof paper with cocoa. Turn the sponge out on to the paper, cover with a clean cloth and cool.

The Filling

 1. Melt the chocolate and brandy on a double boiler.

(cover a pan of water) remove from the heat. Beat the egg yolks to gather then beat in to the chocolate mixture. in a separate bowl , whisk the egg white to soft peak stage and fold lightly and evenly in to the filling.

2. uncover the roulade (swiss roll) remove the paper and spread the cream cheese spread the chocolate mixture over the top, then roll up carefully to enclose the filling chill before serving.










Apple Fritters

Apple Fritters (Serves 4-6)



      Large Apple (Peeled , Coved , and cut in Slices )   3 nos
      Flour                                                                     130 gr
      Baking Powder                                                      10 gr
      Salt                                                                        1 1/2 Teaspoon
      Whole Egg (Beat)                                                   01
       Milk                                                                      150 ml
       Vegetable oil for deep frying  
       Sugar                                                                    150 gr
      Cinnamon Powder                                                 05 gr
      Icing Sugar for dusting


1. Sift the flour, baking powder and salt to gather in to a bowl. Beat in the milk and the egg white a whisk.

2. Mix sugar and cinnamon powder on a plate. Toss the apple slices in this mixture to coat all over.

3. Dip the apple slices in the batter fry in a fork. Drain off the excess batter fry in batches in the hot oil for 4-5 minutes, until golden brown on both sides.

4. Place the icing sugar in a strainer and sprinkle over the fritters. Serve hot with honey or golden syrup.

Club sand witches

                    Club Sand witches

                   Ingredients - Toasted bread            4 slices

                                         Chicken spread         1 tin

                                         Butter                        3 tablespoon

                                         Cheese                       1 slice

                                        Tomatoes                    3 slices

                                         salad                          1 leaf

                                        Chinese cucumber      3 slices


                     METHOD -  cut the corners of the toasted bread. apply butter in all the 4 slices of bread . Use 1 slice to fill it with cheese and butter , place another slice on top and fill it with the chicken spread , place another slice on top and fill that slice with cucumber and salad . cover it with another slice. Insert a tooth prick from the top to bottom and serve the sand witch.


Chicken omelette

              CHICKEN OMELETTE

  Ingredients - Chicken cut into small pieces       100g

                        Chopped garlic                                03

                        Egg                                                  03

                        Bell pepper ( red, yellow, green)     50g

                        Onions                                             50g

                       pepper powder                                 1 / 4 teaspoon

                       Salt                                                   1 /4 teaspooon

                       Flour                                                1/ 2 tablespoon


                      Oil                                                     3 tablespoon

         METHOD - chop the bell peeper  and the onions into small pieces.  Beat the eggs well  in a pan . Except the lime juice  add all the other ingredients into the pan . Add oil into a saucepan and let it get heated for sometime , then add the chicken omelette mixture into the heated saucepan. turn the omelette up and down and keep it for sometime till it gets fried. serve it in a dish.





Chinese Fried Rice

                 CHINESE FRIED RICE

    Ingredients :- Rice                                   500g

                          chopped cauliflower           150g

                          chopped carrot                  75g

                           beans split into two            100g

                           baby corn split into two     150g

                          cabbage                               100g

                           fried chicken cut into small pieces  250g

                          prawns                                 150g

                          egg white                               02

                         chopped onions                      02 

                         chopped garlic                       3-4

                         ginger chopped                      1 piece

                        vegetable oil                          3 tablespoon

                        soya sauce                             2 tablespoon

                        powdered salt                        as neeeded

                        pepper powder                       as  needed

               METHOD :- 

 Heat the pan for sometime and a oil into it . Add the chopped ginger , garlic and onions . Add the carrots , beans , cauliflower , prawns, fried chicken , cabbage , and finally add the egg whites . mix the rice with soya sauce , oyster sauce , salt  and pepper powder.
